K is a real character. He is my youngest friend from the culinary profession. By now he is a Junior Master Chef competitor. Because he got selected to the completion.
I love avocado even only with sea salt and a toast bread. I love guacamole too, the healthy favorite snack of the Mexicans. The dish that we are going to prepare will be an amazing creamy pasta. You know what is the best part of it? That it is going to be creamy without us adding any cream or butter to it, so this pasta dish is not only delicious but also contains low calorie.
And what is going to make it creamy? The avocado, lemon and olive oil.
For: 4 people
- 250 gr whole-grain fusilli or spaghetti
- 2 pc ripe avocado
- 1/2 cup of basil
- 2 cloves of garlic
- 1/2 cup olive oil
- 1 cup mixed color cocktail tomatoes
- 1 handful of Greek basil
- salt, pepper
- We cook the pasta.
- Until it is cooking, we can prepare the sauce. We blend the ingredients in a blender.
- We cut up the cocktail tomatoes too (if possible we should use several different colors). We plate it with freshly chopped Greek basil and the cocktail tomatoes. We can top it with parmesan.
Avocado is a super food. Most of the avocado in the world is produced in Mexico. The Aztecs and the Mayan people used it as an aphrodisiac. It has a high content of vitamin C, B6 and K. It has a lot of potassium and folic acid. For its latter benefit, it is highly recommended to pregnant mothers as it protects the growing baby’s nerves system. One avocado has twice as much as calcium as a banana. Avocado is one of the cleanest vegetables in the world as its strong skin does not let pesticide go to the plant itself.

So my pancakes can hardly wait to get filled with the first freshly made jams.
We arrived at Mary-Allen McTague’s degustation dinner with great interest and curiosity, and last but not least we were also hungry. The later might have been our biggest problem. The thing that we went hungry for a 5 course menu, and we stayed hungry for the duration of the complete dinner that lasted more than a 4-hour.
