This cookie is special because it is a little crunchy from the outside and soft inside. The lemon’s flavor is fantastic in there. This cake is well part of the Christmas cookies variety.

The cherry gets a real nice taste from the vanilla and the cinnamon. Of course I was not using white flour this time either and replaced sugar by xylitol. I experience the following since I do not eat sugar: I do not crave so much for it since I do eat it, only very seldom. I do not keep chocolate in our home, so if I wanted to have some sweets, this cake will do, will not even have to count calories.

I have not even realized that my neighbor has chickens until he has come over and gave me some fresh eggs. I told him that in the future we shall buy the eggs from him and not from the store so we can be sure to always have fresh eggs. In the happiness of having fresh eggs, I decided to make for dinner one of favorite childhood dishes, homemade dumplings with eggs and fresh salad. We used to eat this dish around May when I was a child when you could already buy fresh salad at the vegetable shops. My mom has made this dish all the time so I learnt from her how to make dumplings that are not sticky. I had nice memories coming back when I prepared this dish. And the view that you have when the eggs are scrambled is not comparable to store eggs, they were beautiful yellow. Attention, this dish you must serve when it is ready, as it is best eaten immediately.

There are a few small tricks that is worth to stick to if we like to bake a high-rising sponge. We should definitely bolt the flour and not only once. We should do it only with the flour and then bolt it with the flour and the baking powder too. The egg white should never have egg yellow inside when we separate them because otherwise we cannot make a hard whip that we need. We should always add a pinch of salt to the egg white before we start to beat it. When we pour the sponge mix in the baking pot we should shake it with a fast movement so that the air can leave, and our sponge is not airy. We should never open the oven door during baking our sponge because otherwise it will not rise. We can either bake it in a cake form or a square pot. Anyways, we can create a great light-tasting holiday cake from this even for Easter. I have decorated my cake with strawberries but we can decorate it with some other fresh fruits too (berries mostly).

This is not a low calorie snack but its advantage is that it can keep another day without getting dry. I recommend it for Easter for finger food for your family and guests. But of course we can prepare it any time we like. To make the dough is quite simple, and while you are baking it, you will have an inviting smell in your kitchen.

This dish brings good memories of my grandma. And of course the half done aluminum spoon that she used to make the dumplings with, as the spoon got half size (half of it was basically gone) by the dumplings making… Already the smell of my grandma’s soup was attarctive, but the taste was just incomparable. This can be a main dish for people on fasting. But the others will not miss meat from this vegetable soup dish either.

Pancakes is one of my temptations. Whenever I smell it getting made, I immediately have a desire for it. And for me the filling does not matter, I like it all. I have quite a routine in making them, it takes me a short 20 min. However, I like if the dough can rest a bit before frying them.
