When it is asparagus season, it does not matter whether it is white or green, we like to have it both on our menu, so I make either a soup or some side dish out of them. Asparagus is a very healthy vegetable. It is an excellent detoxifier due to its high potassium content since it has a diuretic effect. Further on asparagus contains calcium, phosphorus, iron, sodium, beta-carotene, folic-acid and C-, B1-, B2-, B6- vitamins. It is also reach in trace elements. So I can only encourage everyone to make some asparagus dishes. The below simple and colorful soup can even be a main dish for dinner.

We hardly eat any dairy products and we do not drink any milk, I only use milk for to make a dough with yeast. However, time to time, we like to eat cottage cheese and sour cream coming from the countryside, it is much tastier and fatter than the ones you can buy in a store. If my mom surprises us with sour cream and cottage cheese from a village near Gyöngyös, my home-town, I like to make Hungarian style cottage cheese pasta with bacon and sour cream, dill-cottage cheese sweet pastry, cottage cheese strudel, or sweet cottage cheese cream for the pancake or salty one that I am going to share with you now. We eat the salty cottage cheese cream with toast bread, this time I served it with seasoned avocado (salt, pepper and lime juice). It is a nice combination of three for breakfast, lunch or for dinner and last but not least it is also healthy. Avocado is a great source of vitamin A, B, C, E and D. The oils in their have a beneficial effect on our body, e.g. it helps to keep our cholesterol balanced and also keeps our skin younger. Cottage cheese has a good level of calcium in there. And for those with liver sicknesses, it helps with their amino acids level. I had learnt to make a „kőrözött” (the Hungarian name for the above dish) from my father as a child. So making it, brings back nice memories.

From twelfth-night till cremation is the time of carnival. This the time to party to attend balls, eat and drink. So the traditional meals this time of the year contain a lot of meat so that after drinking alcohol, these heavier dishes can help to settle the stomach, body and the soul when you are having hangover. Let’s start the carnival dishes with a traditional smoked pork leg soup, which I had learnt how to make from my dear father, so cooking it brings back nice memories too.

Sour cabbage & stew

My mum makes the most delicious sour cabbage & stew that is why mine tastes similar to hers. This can be an excellent dish in between the holidays since it is does not take too long to make it, and it is a bit like kocsonya, we can eat it for days and it does last for days. It is on top of all, an excellent immune strengthener therefore I only wash it through once before cooking so that all the good beneficial vitamins stay in there.

This soup is an excellent comfort food after the Christmas period, from more of its advantages just to mention its enter cleaning effects. If we want to focus on cleaning our body, then just leave the meat out. There are several types of lentils. there is e.g. beluga lentils, that is small and dark colored, puy lentil, that is also smaller you can buy it in different colors. This time, since the holidays, I made my soup from gourmet mountain lentils, this also a smaller type. This soup is an excellent choice also for New Year’s Eve. I am sure I will make it again then since I could not go to bed on the 1st without eating lentils.

This is a type of dish that we can have our butcher help with the bigger part. The thin flank needs to have a sack opened for the filling. This is what our butcher will do for us. The rest of the steps are real simple. We can fill the meat with anything now I am going to show you my variation. The salad is easy and it goes well with this dish and it makes it also colorful. Therefore we can make it festive dish on the Christmas table.
