I have bought some spring parsnips that was full of parsley. This gave the idea to cook a cream soup out of it. The fresh characteristic taste of the parsley was well compensated with the butter and the cream. The garlic crouton harmonizes well with the soup.
I have not even realized that my neighbor has chickens until he has come over and gave me some fresh eggs. My mom has made this dish all the time so I learnt from her how to make dumplings that are not sticky. I had nice memories coming back when I prepared this dish. And the view that you have when the eggs are scrambled is not comparable to store eggs, they were beautiful yellow. This soup is an excellent comfort food after the Christmas period, from more of its advantages just to mention its enter cleaning effects. There are several types of lentils. there is e.g. beluga lentils, that is small and dark colored, puy lentil, that is also smaller you can buy it in different colors. This time, since the holidays, I made my soup from gourmet mountain lentils, this also a smaller type. This soup is an excellent choice also for New Year’s Eve. I am sure I will make it again then since I could not go to bed on the 1st without eating lentils.
