From twelfth-night till cremation is the time of carnival. This the time to party to attend balls, eat and drink. So the traditional meals this time of the year contain a lot of meat so that after drinking alcohol, these heavier dishes can help to settle the stomach, body and the soul when you are having hangover. Let’s start the carnival dishes with a traditional smoked pork leg soup, which I had learnt how to make from my dear father, so cooking it brings back nice memories too.
My mum makes the most delicious sour cabbage & stew that is why mine tastes similar to hers. This can be an excellent dish in between the holidays since it is does not take too long to make it, and it is a bit like kocsonya, we can eat it for days and it does last for days. It is on top of all, an excellent immune strengthener therefore I only wash it through once before cooking so that all the good beneficial vitamins stay in there.

We prepare quinoa the same way like rice. We cook it in double amount of water in 15-20 min. We can make a cold or warm salad out of i tor we can also prepare a main dish. This time, we are going to prepare a main dish.
Light summer dish, it is excellent for family or friends bbqs in the garden because you can prepare it meanwhile you are chatting with your loved ones even on a small bbq. Int he summer heat, this is a pleasant dish and it feels good for the soul: a green herbed lamb burger with the feta and the grilled tomatoes. I made them in the garden.
