  1. We sear the bones in the oven for about 30 minutes on 200 degrees Celsius.
  2. To get there, put enough water at the beginning, because it shall cook away in this long period of time. If the soup has been cooked we strain it and cool it.
  3. I usually freeze them by small portions so it is very handy to take each out when I want to make dips, sauces and ragout. In winter we often eat it with some eggs in. In case of a cold, it is a must!
