By us the black mussels is rare, you don’t really come across with. So we do not eat it every day. But if by any chance we find some fresh by the Fisherman’s we can easy put together a romantic white wine dinner. We have recently made some according to my own recipe with my husband. We have prepared in 20 mins a magical dish which I can recommend you for the coming Valentine day too. They say mussels are aphrodisiacs.

From twelfth-night till cremation is the time of carnival. This the time to party to attend balls, eat and drink. So the traditional meals this time of the year contain a lot of meat so that after drinking alcohol, these heavier dishes can help to settle the stomach, body and the soul when you are having hangover. Let’s start the carnival dishes with a traditional smoked pork leg soup, which I had learnt how to make from my dear father, so cooking it brings back nice memories too.

My mum makes the most delicious sour cabbage & stew that is why mine tastes similar to hers. This can be an excellent dish in between the holidays since it is does not take too long to make it, and it is a bit like kocsonya, we can eat it for days and it does last for days. It is on top of all, an excellent immune strengthener therefore I only wash it through once before cooking so that all the good beneficial vitamins stay in there.

This soup is an excellent comfort food after the Christmas period, from more of its advantages just to mention its enter cleaning effects. If we want to focus on cleaning our body, then just leave the meat out. There are several types of lentils. there is e.g. beluga lentils, that is small and dark colored, puy lentil, that is also smaller you can buy it in different colors. This time, since the holidays, I made my soup from gourmet mountain lentils, this also a smaller type. This soup is an excellent choice also for New Year’s Eve. I am sure I will make it again then since I could not go to bed on the 1st without eating lentils.

My zserbó

In my opinion zserbó is most elegant Hungarian tea-time cake. I make it with a lot of walnut and home-made apricot marmalade. I hardly use sugar, and if I do, it is always xylitol. Zserbó is a traditional Christmas cake which would be able to last until the New Year if we did not eat it… I have just made it, so by Christmas the tastes come well together.

This used to be a feast dish during our visits in the Christmas time at my grandma’s. But of course my grandma was not serving it with pumpkin cream, she served it with lots of onion and potatoes baked together with the meat in the fat. Nonetheless, the fat we shall need. We are going to use a lot of mangalica lard. Potatoes we only put in a few just for the tradition, . I have also exchanged the stronger red onions to shallot onions and we should not forget the garlic either that grandma was also using a lot. This way, we can cook a real filling winter comfort food that we can make feast-like. We can make a rillettes from the rest of the meat and fat which can be an excellent breakfast dish one of those lazy mornings with some fresh baguette or any other fresh bread. I cut up a lot of spring onions and radish to eat with.

So, this is going to be the a dish that will simply be amazing on the table at Christmas Eve, because our family members are going to love the taste. On top of all, it takes on time and effort to make it. Further more, it is a light dish, we can even have it if we are on diet, and this is also an advantage during the holiday feast.

Goose liver in goose fat

Like my father used to make goose liver for Christmas, I keep his tradition and I make this festive dish too. In my childhood we would only eat goose liver for Christmas, though I like to choose this dish often in a restaurant if they have it on their menu. We should buy at least the same amount of fat so that we can prepare at least two different dishes since we bought this expensive ingredient. I recommend you proceed the way I did. We can easy prepare this dish a day before Christmas Eve, so we have hardly anything to do before it comes to serving. Category: meat dish, Hungarian, gluten free, egg free
