- We peel the potatoes and without cutting them up, cook them for 10 minutes. Then we strain them from the water; shake them well so that they have a bigger surface to get crispy. We season them with salt and pepper and olive oil and bake it on 180 C for 30 min.
- Then we press them a bit with the masher so they get even bigger surface to get crispier. We can add a bit more ghee or olive oil and the rosemary and garlic. We bake it ready in 30 min.
It is an excellent side dish for fish and meat dishes.
